Easy Artichoke Chicken Salad

A few weeks ago, I had both sides of the family over for a little gathering. Pressed for time and looking for a tasty creation to call my own, I once again leaned on Trader Joe’s. My secret ingredient was nothing more than a jar of the “Trader Giotto’s Artichoke Antipasto” spread. You just need a few simple ingredients and some grilled chicken breast cut into bite-sized pieces.  Mine was prepared in the deli department of my local grocery store, but leftovers work great or  you can get it from a bag.

ArtJarMix the artichoke spread and chicken together, then add sliced cherry tomatoes, kalamata olives, and some crumbled feta cheese (buy the Mediterranean flavor if you like extra seasoning). If you wanna do more, chop up some red or green onions and throw in some minced garlic for a little kick!ArtMix

This refreshing fare can be served chilled or at room temperature. Make it your main course, serve it like a bruschetta atop crusty baguette slices, or pile it into an edible dish. I served mine inside crispy cups made from wonton wrappers. Just place a couple wrappers into each well of a muffin tin and bake until brown and crispy.ArtWontons
